Ingredients:


4 tablespoons unsalted butter


1 cup diced carrots


1 cup diced yellow onion


1 cup chopped celery


3/4 cup wild rice


1/3 cup all-purpose flour


1 pound boneless chicken breast, cut into small cubes


8 cups low-sodium chicken broth


1/2 teaspoon salt, or to taste


1 teaspoon ground black pepper, or to taste


1 cup heavy whipping cream

Instructions:

In a soup pot or Dutch oven, melt the butter over medium heat.


Add the diced carrots, onions, and celery; sauté until golden brown.


Stir in the flour until fully incorporated and cook for about 2 minutes to eliminate the raw flour taste.


Add the wild rice and cubed chicken; season with salt and pepper.


Pour in the chicken broth and bring the mixture to a simmer.


Let it simmer for approximately 30 minutes, or until the rice is tender.


Gradually stir in the heavy whipping cream, ensuring a smooth consistency.


Cook for an additional 5 minutes on medium-low heat.


Adjust seasoning to taste and serve hot.
