Creamy Alfredo Lasagna Soup

Ingredients:
1 lb ground Italian sausage (or ground beef)
8 oz lasagna noodles, broken into 2-inch pieces
4 cups chicken broth
2 cups heavy cream
1/2 cup grated Parmesan cheese
1 cup shredded mozzarella cheese
1/2 cup ricotta cheese (optional, for serving)
4 cloves garlic, minced
1/2 onion, finely chopped
2 tbsp olive oil
Salt & pepper to taste
Fresh parsley or basil, chopped (for garnish)

Instructions:
1. Cook the Meat
In a large pot, heat olive oil over medium heat. Add onion and garlic, sauté until fragrant. Add ground sausage and cook until browned. Drain excess fat if needed.
2. Add Liquids & Simmer
Pour in chicken broth and bring to a simmer. Add the broken lasagna noodles and cook until tender (about 10–12 minutes).
3. Creamy Alfredo Finish
Stir in heavy cream, Parmesan, and mozzarella. Cook over low heat until cheese is melted and soup thickens slightly. Season with salt and pepper.
4. Serve
Ladle into bowls and optionally top each with a spoonful of ricotta. Garnish with fresh herbs.
