Chicken Pot Pie Soup 🍲🥧

   Ingredients    

- 2 tablespoons unsalted butter  

- 1 tablespoon olive oil  

- 1 medium onion , diced  

- 2 medium carrots , peeled and diced  

- 2 celery stalks , diced  

- 3 cloves garlic, minced  

- 1/4 cup all-purpose flour  

- 4 cups chicken broth  

- 1 cup heavy cream or half-and-half  

- 2 cups cooked chicken, shredded or diced  

- 1 cup frozen peas  

- 1 teaspoon dried thyme  

- 1 teaspoon dried parsley  

- Salt and pepper , to taste  

- Optional: 1/2 teaspoon poultry seasoning  

- Optional garnish: Biscuit crumbles, puff pastry crisps, or pie crust pieces  


   Instructions  


  1️⃣ Sauté the Vegetables:    

In a large pot or Dutch oven, melt butter with olive oil over medium heat. Add diced onion, carrots, and celery. Cook for 5-7 minutes, stirring occasionally, until the vegetables soften. Add minced garlic and cook for an additional minute.


  2️⃣ Make the Roux:    

Sprinkle the flour over the vegetables and stir until evenly coated. Cook for 1-2 minutes to remove the raw flour taste.


  3️⃣ Add the Broth:    

Gradually whisk in the chicken broth to prevent lumps. Bring the mixture to a gentle simmer, stirring frequently until it thickens slightly.
