Creamy Broccoli Soup 🥦🥣
Ingredients:
1 head of broccoli, cut into bite-sized florets
1 cup pre-cooked shredded carrots
2 tablespoons butter
2 garlic cloves, minced
1 cup heavy cream (or sour cream for tangier flavor)
1/2 cup milk
1/2 cup grated cheese (cheddar, Parmesan, or your favorite melty kind)
Salt and pepper to taste
Pinch of ground nutmeg (optional, but adds depth!)
Directions:
Sauté Garlic & Carrots:
In a large pot over medium heat, melt the butter. Add the minced garlic and sauté for about 30 seconds until fragrant. Then stir in the pre-cooked shredded carrots just to warm them through.
Add Creamy Base:
Pour in the cream and milk, and bring to a gentle simmer while stirring. Add a pinch of nutmeg if using, and season with salt and pepper to taste.
Add Broccoli:
Gently stir in the broccoli florets. Simmer for 8–10 minutes, uncovered, until the broccoli is tender but still bright green. You can cook a little longer if you like it softer.
Melt in the Cheese:
Reduce heat to low, and stir in the grated cheese until melted and creamy. Be sure to stir often so the cheese doesn’t stick to the bottom.
Taste & Serve:
Adjust seasoning if needed. Ladle into bowls and enjoy hot! Great with warm bread, croutons, or a sprinkle of extra cheese on top.
