This super easy Lemon Chicken Piccata is ready in about 30 minutes and perfect over fresh pasta, rice or mashed potatoes! 🍝🍚🥔

🛒 Ingredients:


🥩 1 lb. chicken breasts, halved and pounded thin

🍋 1 tsp lemon pepper seasoning (or lemon zest)

🧂 1/4 tsp salt

🌾 ¼ cup all-purpose flour

🧈 6 tbsp butter, divided

🫒 2 tbsp olive oil, divided


✔️ For the Sauce:

🧄 2 tsp garlic, minced

🌾 2 tbsp all-purpose flour

🍗 1 cup chicken stock

🍷 ¼ cup dry white wine

🍋 2 tbsp lemon juice

🥄 3 tbsp capers, rinsed

🌿 2 tbsp fresh parsley, chopped

👩‍🍳 Instructions:


1. Season chicken with lemon pepper and salt, then dredge in flour.


2. In a skillet over medium-high heat, add 1 tbsp butter + 1 tbsp oil. Cook 2 pieces of chicken till golden and cooked through (3–4 mins per side). Set aside and repeat with remaining chicken.


3. For the sauce: Add 3 tbsp butter to the pan and sauté garlic for 30 secs.


4. Whisk in 2 tbsp flour until smooth. Add white wine and scrape pan.


5. Slowly whisk in chicken stock, then stir in lemon juice and capers. Simmer 5 mins.


6. Stir in remaining butter, return chicken to skillet, and simmer 5 mins.


7. Garnish with parsley & lemon wedges 🍋🌿. Serve over pasta or your fave side!
