A creamy, nutty, and mildly spicy Malaysian curry that combines satay flavors with tender chicken in a rich coconut-peanut sauce. Perfect over fluffy rice! 🍚✨

🔰 🛒 Ingredients:
Satay Seasoning:
☑️ 1½ tsp coriander powder
☑️ 1½ tsp cumin powder
☑️ 1½ tsp turmeric powder
☑️ 1½ tsp paprika
☑️ 1¼ tsp pure chili powder
☑️ 3½ tsp curry powder (mild)
☑️ 1¼ tsp kosher salt (or 1 tsp table salt)
☑️ 2 tsp white sugar
Chicken:
☑️ 750g (1½ lb) chicken thigh fillets, bite-sized
☑️ ½ onion, grated
Satay Curry Sauce:
☑️ 2 tbsp oil (divided)
☑️ 3–6 bird’s eye chilies, finely chopped
☑️ ¼ onion, finely diced
☑️ 4 garlic cloves, minced
☑️ 1 cup chicken stock
☑️ ¾ cup unsalted roasted peanuts (half blended, half for garnish)
☑️ 2 tsp kecap manis (sweet soy sauce)
☑️ 3 tsp dark soy sauce
☑️ 400g coconut milk (full-fat)
☑️ 2 tbsp peanut butter (natural)
☑️ 2 tbsp lime juice (to taste)
Optional Flavor Infusion:
☑️ 3 kaffir lime leaves OR 1 stalk lemongrass (smashed)
Optional Garnish:
☑️ Chopped peanuts
☑️ Fresh cilantro leaves
☑️ Sliced chili

🔸️ 📜 Directions:
1️⃣ Make Seasoning & Marinate:
➖ Mix all satay seasoning spices.
➖ Toss chicken with seasoning +
grated onion.
➖ Marinate at least 20 mins (up to overnight).
2️⃣ Sear Chicken:
➖ Heat 1 tbsp oil in skillet (high heat).
➖ Brown chicken in batches (don’t fully cook). Set aside.
3️⃣ Build the Sauce Base:
➖ Lower heat to medium, add remaining oil.
➖ Sauté chilies, diced onion, and garlic until translucent (~2 min).
➖ Stir in any leftover seasoning, cook 1 min.
4️⃣ Blend for Creaminess:
➖ Transfer mixture to blender with chicken stock + half the peanuts.
➖ Blend until mostly smooth. Return to skillet.
5️⃣ Finish Curry:
➖ Add remaining peanuts, kecap manis, dark soy, coconut milk, peanut butter, and kaffir lime leaves/lemongrass if using.
➖ Return chicken to pan, simmer on medium-low for 15 mins until thickened.
6️⃣ Final Touch:
➖ Stir in lime juice to taste.
➖ Serve over rice. Garnish with
