Moroccan Harira Soup with Chickpeas and Lentils
Ingredients:
2 tablespoons olive oil
1 large onion, chopped
3 cloves garlic, minced
1 celery stalk, chopped
1 large carrot, chopped
1/2 teaspoon ground turmeric
1/2 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon paprika
1/2 teaspoon ground cumin
Salt and pepper, to taste.
1/2 cup lentils, rinsed
1/2 cup chickpeas, canned or cooked
1 can (14.5 oz) crushed tomatoes
4 cups vegetable or chicken broth
1/4 cup rice
1/4 cup chopped fresh parsley
1/4 cup chopped fresh cilantro
Juice of 1/2 lemon
Directions:
In a large pot, heat olive oil over medium heat. Add onion, garlic, celery, and carrot, and cook until softened, about 5 minutes.
Add turmeric, cinnamon, ginger, paprika, cumin, salt, and pepper, stirring for 1-2 minutes until aromatic.
Add lentils, chickpeas, tomatoes, and broth, bringing to a boil. Reduce heat, cover, and simmer for 25-30 minutes, or until lentils are tender.
Stir in rice and continue cooking for another 10-15 minutes until rice is tender.
Add parsley, cilantro, and lemon juice, adjusting salt and pepper to taste before serving.
